I made this for dinner tonight. It’s very cheeryand colourful. The dressing is wonderful with the mixture lemon juice, soy, and dijon mustard. I added a tablespoon of Chia seeds for an extra boost. Delicious!

I think adding some slivered almonds would enhance the dish and add another texture and crunch.
